Coffee ginger cookies may sound like another version of gingerbread man cookies that will make a fun day! It serves right on all party time!
Ingredients
1/2 cup unsalted butter, softened
1 cup sugar
1 1/2 tsp baking soda
1/2 cup hot strong black coffee
1/2 cup dark molasses
1 egg, beaten
1 tsp vanilla extract
2 1/2 cups sifted flour
1/4 tsp salt
1 tsp ground ginger
Method

Preheat the oven to 400 degree F.

Lightly grease two large baking sheets
with butter or vegetable shortening.

In a large mixing bowl, cream together
the butter and sugar.

Dissolve the baking soda in the
coffee,

Beat the hot coffee mixture into the
batter.

Beat in the molasses.

Allow the batter to cool, then mix in
the egg and vanilla extract.

Sift the flour with the salt and
ginger.

Gradually add the flour to the batter,
1/2 cup at a time, until the mixture forms a soft dough.

Knead until smooth.

If the dough is sticky, add more flour, a
little at a time, until it is easier to work.

On a floured work surface, roll out
the dough to a thickness of 1/4 inch.

Cut out the cookies using a 3-inch,
curly-edged biscuits or cookie cutter.

Place the cookies 1 inch apart on the
baking sheets.

Bake for 10 to 15 minutes, or until the
cookies have browned around the edges.

Remove from the oven.

After the cookies have cooled for 2 to
3 minutes, but are still warm to the touch, use a spatula to
transfer them to wire racks to cool completely.
